Arrive in Rome and meet our local Representative and transfer to Orvieto. Located in west-central Umbria, Orvieto sits on a plateau of volcanic tufa. Its sheer rock cliffs provided a natural means of defense for the Etruscans who lived on &#34;the rock,&#34; as Orvieto is known to locals, for centuries before finally capitulating to the Romans. Abandoned until the Middle Ages, it became a Catholic stronghold and frequent hideout for popes during periods of plague, pestilence, and sackings in Rome. Its magnificent cathedral, or Duomo, took 300 years to build and is one of Europe's greatest examples of Romanesque Gothic architecture. The old city is only a mile long from end to end, and it is covered with an enthralling grid of narrow streets and alleys named after noble families of the Medieval era. Hotels occupy grand old palaces, or palazzi, and restaurants, wine bars, and shops are tucked into centuries-old houses and storefronts. After a visit of the Duomo and Torre del Moro, enjoy a light lunch at a local restaurant before continuing with your visit of the underground of Orvieto, an exciting experience to see the remains of an old olive oil mill, Medieval throws, and dovecotes. Ready for some food shopping? Start your day with a visit of Orvieto&#8217;s market. Meet the farmers and enjoy samples as you shop for the freshest ingredients before heading to Casale Polegri for a hands-on cooking class with Chef Lorenzo. Enjoy your meal and relax at the farm before meeting with Giovanni for a Truffle Hunting experience. End the day with a pizza dinner in Castiglione. Overnight in Orvieto. (B, L, D)

Thursday

After breakfast depart for your visit of a goat farm. This family-run operation creates some of the best cheeses in the area and has won awards for making the best organic goat milk yogurt in Italy. After  a light lunch based on tastings of artisanal cheeses from latte di capra (goat milk), continue your visit of the area with a stop at Bartolomei olive oil mill. Here you will learn about the history of the family that has been producing olive oil for more than 100 years from a tree crop that dates back more than 6,000 years. Tonight, enjoy a truffle-based dinner at Casale Polegri before heading back to Orvieto for the night. (B, L, D)

Friday

Today, we start the day with a visit of Montegiove Castle. Nestled in the peaceful hills of Umbria, among the most poetic of Italian landscapes, the castle of Montegiove has existed since the early 13th Century and for the last four centuries it has been the property of the Marquises Misciattelli. Today, it is the center of a wonderful estate covering nearly 1200 hectares of beautiful Umbrian countryside, including a busy farm, winery, and an exclusive and luxurious country house. Enjoy a light lunch consisting of a selection of cured meats and followed by wine tasting, before continuing your tour with a visit of a Chianina Cow Farm. The Chianina is one of the oldest breeds of cattle originating in the area of the Valdichiana, from which it takes its name, and the middle Tiber valley. The Chianina breed has an unsurpassed capacity for lean meat production. The meat is red and is free from waste, but still retains a marbling of fat among the muscling. In the afternoon you will have a chance to visit Montepulciano a lovely Medieval hilltop town surrounded by vineyards and known for its &#8220;vino nobile&#8221; red wine. After a wine tasting session and dinner at a local restaurant, you will head back to Orvieto. (B, L, D)

ORVIETO I BOLSENA I CIVITA DI BAGNOREGIO I ORVIETO Start your day with a visit of Bolsena's Gardens. Located on the shores of Marta, an emissary of Bolsena Lake, this stunning Garden is named after a building dating back to the Romans and lying above the creek, a sort of bridge-house containing a grid system (originally made of canes, after which Cannara is named) allowing the capture of eels. The Garden is home to a large variety of flowers, such as roses, peonies, irises, violets, poppies, callas and a huge lotus. Continue the tour with a visit of a Buffalo Mozzarella Farm where you will be treated to a delicious light lunch of cheese and mozzarella tastings. End your day with a visit of Civita di Bagnoragio, also known as the &#34;Dying Town&#34;. This stunning little gem has escaped the modern age mostly because of topography. The town teeters atop a crest rising high above a vast canyon ruled by wind and erosion. Today, the only way in or out is by a footbridge. Civita is an artist's dream, a town in the nude. Each lane and footpath hold a surprise. Ivy drapes over arches and scrambles up walls, and potted flowers parade across balconies. The warm stone walls glow, and each stairway is dessert to a sketch pad or camera. Dinner at a local restaurant. In the afternoon you will be departing the farm for a visit of Parco dei Mostri (or the Monsters Park) in Bomarzo. Prince Pier Francesco Orsini who was a patron of the arts commissioned the sculptures in the 1500&#8217;s when his wife Giulia Farnese passed on. At the time, the unusual sculptures were seen as grotesque and hence the Monsters Park was never really that popular. However, things changed in 1954 when Giovanni Bettini bought and restored the park. It has since been an interesting attraction for young and old alike. Tonight, dinner is at the farm, where a delicious Italian-style BBQ awaits you! (B, L, D)

Today is all about food and wines! Join Chef Lorenzo for your last hands-on cooking class followed by lunch. This afternoon you will be learning about the different meat cuts during a butchery workshop held by Amedeo, and about &#8220;Sv&#236;nnere&#8221;, a typical product based on red wine and sour cherries made according to an ancient recipe of the Orvieto tradition. The Farewell dinner tonight will be held at Casale Polegri followed by the diploma ceremony. (B, L, D)
